Carrot & Coriander Soup


My mum makes the BEST carrot & coriander (cilantro for the Americans reading this!) soup, and in these cold AF winter months, this is exactly what my body and soul craves!


And it would be pretty selfish of me not to share her recipe, because 1. it is so delicious, 2. I'm pretty sure it helps you to see in the dark ;) and 3. It is very healthy #winning


BTW - I'm not a huge fan of coriander/cilantro on it's own, but in this soup....bellissimo! So don't pre-judge this soup based on the coriander/cilantro.

Ingredients

  • 1 tbsp vegetable oil

  • 1 onion, chopped

  • 1 tsp ground coriander

  • 1 potato, chopped

  • 5 cups carrots, peeled and chopped

  • 5 cups vegetable stock

  • handful of fresh coriander

Directions


1. Heat 1 tbsp vegetable oil in a large pan, add 1 chopped onion, and fry for 5 mins until softened.

2. Stir in 1 tsp ground coriander and 1 chopped potato, cook for 1 min. 3. Add the peeled and chopped carrots and vegetable stock, bring to the boil, then reduce the heat.

4. Cover and cook for 20 mins, until the carrots are tender. 5. Pour the soup into a blender with a handful of coriander then blend until smooth (you may need to do this in two batches). Return to the pan, taste, add salt if necessary, and serve with crusty bread.
