I don’t know about you, but I love a big bowl of healthy, tasty food. There’s just something about being able to taste everything all together that just makes it that much more delicious and special!
Enter…the VEGAN BOWL!
Here’s my fave bowl of the moment. I adapted it from a few different recipes (I love to take my favorite bits from lots of different places, throw it together and see what happens!).

1/4 bag shredded cabbage
1/4 chopped portobello mushroom
1/2 chopped carrot
1/4 cup cooked quinoa
1/3 cup diced or shredded tofu
Teaspoon avocado oil
Teaspoon crushed garlic
- Heat the oil in a hot pan, add garlic and all the veggies and tofu
- Stir fry until veggies are tender
- Once the liquid has evaporated, add the quinoa and tahini sauce and mix well
1 tablespoon tahini
1/2 tablespoon balsamic vinegar
1 teaspoon Apple Cider Vinegar
Juice of 1/2 lime
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
Mix all ingredients together, make sure it is medium runny (not too liquidy, but not too solid – just enough to coat all the veggies in the cabbage bowl, without making it soggy. Know what I mean?!)
